Just wanted to share some pictures of what some of your fellow Tommies have been up to! Feel free to share what you’re making at home! Enjoy your week ☀️☀️

 

Here is the recipe for the Biscuits:

Yield: 8

500 ml flour
15 ml baking powder 3 ml salt
15 ml sugar
80 ml shortening 200 ml milk 

Directions:

1.   Preheat oven to 375 F. 

2.   Combine flour, baking powder, salt and sugar. Mix to distribute evenly. 

3.   Cut in shortening with a pastry blender or fork until it resembles fine crumbs. 

4.   Make a “well” in the center of the mixture and add milk. 

5.   Mix with a fork until dough can be formed into a soft ball. 

6.   Pat down until about 1.5 cm thick. 

7.   Using a round cutter cut dough into 4 pieces. Roll into a ball again and pat down. Cut out 3 more biscuits. Roll remaining dough into a ball, pat down to make one more biscuit. 

8.   Place on a cookie sheet and bake for about 15 minutes.

1.   Identify the yield, preparation procedures, and cook time and temperature. 

2.   What is the purpose of the baking powder in this recipe? 

3.   What is the purpose of the sugar in this recipe? 

4.   This recipe gives you the measurements in milliliters, convert the measurements into imperial (cups, teaspoons, tablespoons). 

5.   What smallwares (small kitchen equipment) do you require to make this recipe?

Hi Everyone! We are continuing today with the Letters in BREATHE. We completed B & R in class, so we will tackle the letter E this week. Take a look through the notes (powerpoint) then complete the questions attached below.

 

At the end of the notes, you will find a link to a YouTube guided meditation (https://www.youtube.com/watch?v=Xe54byUqico&t=796s) that I would like you to practice. There is also some reflection questions on the meditation activity for you to keep up with your weekly reflections.

 

And just a reminder to take a few minutes for your daily journal!

Here is the recipe for the Glazed Ham:

 

1 5-6lb smoked shank ham

Whole cloves

¼ cup brown sugar

1 cup honey

2/3 cup margarine, melted

 

Directions:

1.   Pre-heat oven to 325 F.

2.   Score ham and place cloves in intersections of the lines.

3.   Mix together brown sugar, honey and margarine.

4.   Brush half of the glaze mixture over the ham.

5.   Place the ham in a roasting pan with a rack.

6.   Cook the ham for 2 hrs, basting every 15-20 minutes and adding the remaining glaze after one hour.

7.   Remove from oven, let cool, carve and enjoy!

 

 

A few things I would like you to do:

 

1.   Define score as a cooking term.

2.   Sometimes the fat and rind (skin) will be removed before cooking the ham, what would be the benefit of NOT removing it?

3.   Define basting.

4.   What is the purpose of basting the ham as it cooks?

Hi Folks!

I will be posting a couple videos a week for Culinary Tech classes. Just a reminder that the 110 Curriculum focuses on baking and the 12o focuses on cooking. So you will be seeing a bit of both, just know that you are only required to take a look at items from youe respective class, but feel free to try anything!

Here is the recipe for the Chocolate Chip Cookies:

1 cup margarine
¾ cup white sugar
¾ cup brown sugar
1 egg
2 tsp vanilla
½ tsp salt
1 tsp baking soda
1 tbsp cornstarch
2 ¼ cup flour
1 cup chocolate chips
 
Directions:
1.   Pre-heat oven to 350 F.
2.   Cream together margarine, white sugar and brown sugar.
3.   Add egg and mix until incorporated.
4.   Mix in vanilla, salt, baking soda and cornstarch.
5.   Add flour, one cup at a time.
6.   Mix in your chocolate so that they are evenly distributed.
7.   Line a sheet pan with parchment paper.
8.   Scoop cookies onto the pan making sure there is about 1 ½ inches between each cookie.
9.   Bake for 12 minutes. Let sit on pan for 5 minutes after baking, let cool. ENJOY

1.   The recipe gives you measurements in cups and teaspoons. Please convert each measurement into milliliters.
2.   What is the purpose of egg, baking soda and salt in the cookie recipe?
3.   What is brown sugar made of?
4.   If we changed the recipe and only used white sugar instead of brown sugar, what three properties of the cookies do you think would change?
